Vegan Protein Nuggets - crispy and low in calories

These vegan chicken nuggets are super high in protein and low in calories. Perfect as a snack or side dish with fries and burgers.

Whether with fries, as a side for burgers, or just on their own. Chicken nuggets are always a hit, and when they are also high in protein and low in calories, there are truly no wishes left unfulfilled.

  • 150.0g Soy Steaks

  • 2.0TL Liquid Smoke

  • 2.0EL Soy sauce

  • 600.0ml Broth

  • For the marinade
  • 200.0g Skyr Alternative

  • 2.0Piece garlic cloves

    grated

  • 0.5Piece Lemon

    juice

  • 2.0EL Soy sauce

  • 1.0EL Maple syrup

  • 100.0ml Soy Milk

  • For the breading
  • 200.0g Breadcrumbs

Step-by-step guide

Prepare soy steaks

The soy steaks break apart, pour over liquid smoke, soy sauce, and broth, and let soak for about 10 minutes.

Marinate

Mix all other ingredients except for the breadcrumbs and marinate the drained soy steaks in it for about 30 minutes (or just briefly, but they won't be as soft then)

Longer marinating time results in softer nuggets.

Breading and baking

Coat in the breadcrumbs and bake in the oven or air fryer at 180 degrees for about 15-20 minutes. You can also fry them in a pan.
