Step-by-step guide

Cooking pasta

Cook the udon noodles according to the package instructions. Before draining them, save some of the noodle water – you'll need it later for the sauce.

Prepare the spice base

Mix chili flakes, garlic powder, turmeric, and cumin smoothly with the peanut butter powder and water.

Stir the sauce until creamy

Add soy sauce, lime juice, crispy chili oil, and maple syrup, then add as much of the reserved noodle water as needed to create a creamy consistency.

Mix & garnish

Add the noodles, stir everything well, and garnish with spring onions and sesame seeds. Serve immediately.
